Mac & Cheese

Ingredients:

  • 1 cup McLelland® Vintage Cheddar (grated)
  • 1 cup McLelland® Extra Mature Cheddar (grated)
  • 2 cups short pasta
  • 2 Tbsp butter
  • 1 Tbsp flour (heaped)
  • 1½ cups whole milk
  • 1 Tbsp American style mustard

Optional

  • ⅔ cup any meat of your choosing

Directions:

  1. Pre-heat oven to 375°F.
  2. Cook pasta in salted water 3-4 minutes less than the packet suggests.
  3. While cooking the pasta make the cheese sauce: melt butter in a small saucepan over medium heat, blend in flour with a wire whisk.
  4. Continue cooking for 2-3mins, and add more milk, stirring the whole time.
  5. Cook the sauce for 5 mins and allow it to thicken then add mustard.
  6. Take the sauce off the heat and add most of both kinds of cheese (leaving some cheese for the top).
  7. Drain cooked pasta but leave a cup of the starchy water.
  8. Return the pasta to the pot and add the cheese sauce and starchy water.
  9. (Optional) Mix in the meat of your choice (cooked) and transfer to an oven-proof dish.
  10. Add the remaining cheese and bake for 30minutes until golden brown.
