Breakfast Burrito

Ingredients:

  • 1 cup McLelland® Extra Mature Cheddar (grated)
  • 4 large eggs
  • Salt
  • Pepper
  • 4 slices thick-cut bacon
  • 2 large tortillas
  • 1 handful of fresh tomatoes (chopped)
  • 2 handfuls of spinach

Directions:

  1. Pre-heat oven to 300°F. Whisk the eggs and add seasoning (salt and pepper).
  2. Place bacon in a frying pan and cook until browned and crispy. Remove all but 2 Tbsp of bacon fat.
  3. Put the tortillas in the oven to gently warm.
  4. Pour the eggs into the bacon pan and let cook until they begin to set around the edges (1-2mins).
  5. Using a spatula push the eggs from the edges to the center every 30seconds until lightly scrambled.
  6. Divide eggs between tortillas then top with cheese, bacon, chopped tomatoes, and spinach before folding to serve.
