Broccoli Cheddar Cheese Bake
Ingredients:
- 3.5 oz McLelland® Extra Mature Cheddar (grated)
- 1 cauliflower crown (broken into 6 cm pieces)
- 1 Broccoli crown (broken into 6 cm pieces)
- 4 leeks (trimmed)
- ¼ cup butter
- 3 slices of bread (crusts removed and roughly chopped)
- 2 Tbsp sage
- ¼ cup sun blushed tomatoes (or sundried tomatoes)
- 1 tsp olive oil
- 2 Tbsp wholegrain mustard
- 3 Tbsp flour
- 1½ cups milk
Directions:
- Simmer the cauliflower and broccoli for 8 minutes or until tender, then drain. Meanwhile, fry the leeks in the butter for 10 minutes until soft.
- Blend the bread and sage to crumbs in a food processor. Add the tomatoes and oil and blend until chopped. Add the mustard and flour to the leeks and stir. Add a third of the milk and stir until thickened.
- Gradually add the rest of the milk and bring to simmer. Stir in the cheese. Pour the sauce over the broccoli and cauliflower in a large ovenproof dish.
- Scatter the crumbs over the top and bake for 5 minutes.
