Breakfast Burrito
Ingredients:
- 1 cup McLelland® Extra Mature Cheddar (grated)
- 4 large eggs
- Salt
- Pepper
- 4 slices thick-cut bacon
- 2 large tortillas
- 1 handful of fresh tomatoes (chopped)
- 2 handfuls of spinach
Directions:
- Pre-heat oven to 300°F. Whisk the eggs and add seasoning (salt and pepper).
- Place bacon in a frying pan and cook until browned and crispy. Remove all but 2 Tbsp of bacon fat.
- Put the tortillas in the oven to gently warm.
- Pour the eggs into the bacon pan and let cook until they begin to set around the edges (1-2mins).
- Using a spatula push the eggs from the edges to the center every 30seconds until lightly scrambled.
- Divide eggs between tortillas then top with cheese, bacon, chopped tomatoes, and spinach before folding to serve.
