Vegetarian Cheesy Pasta Bake
Ingredients:
- ½ cup McLelland® Extra Mature Cheddar (grated)
- 1 red onion
- 1 pack tomatoes
- 1 red pepper
- 1 yellow pepper
- ½ zucchini
- 2 Tbsp olive oil
- 2 cloves garlic (diced)
- 1 Tbsp tomato puree
- 1 ½ cups penne pasta
- 1 cup mozzarella
- Basil leaves (to scatter)
Directions:
- Heat the oven to 400°F.
- Cut the onions, tomatoes, zucchini, and peppers into small wedges.
- In a large pan on medium-high heat, heat 1 tbsp of olive oil and cook the red onion, peppers, and zucchini until soft. Add Tomatoes after 5 mins.
- Add the garlic and tomato puree and cook until vegetables start to brown.
- Cook pasta in salted water for 3-4 minutes less than the packet suggests.
- Add 2 tbsp of pasta water to the vegetable mix.
- Mix the vegetable mix and pasta and then spoon into a large oven-proof dish.
- Top with the mozzarella and McLelland® Cheddar, then bake for 10-15 mins until golden and bubbling. Serve with basil leaves.
