Vegetarian Cheesy Pasta Bake

Ingredients:

  • ½ cup McLelland® Extra Mature Cheddar (grated)
  • 1 red onion
  • 1 pack tomatoes
  • 1 red pepper
  • 1 yellow pepper
  • ½ zucchini
  • 2 Tbsp olive oil
  • 2 cloves garlic (diced)
  • 1 Tbsp tomato puree
  • 1 ½ cups penne pasta
  • 1 cup mozzarella
  • Basil leaves (to scatter)

Directions:

  1. Heat the oven to 400°F.
  2. Cut the onions, tomatoes, zucchini, and peppers into small wedges.
  3. In a large pan on medium-high heat, heat 1 tbsp of olive oil and cook the red onion, peppers, and zucchini until soft. Add Tomatoes after 5 mins.
  4. Add the garlic and tomato puree and cook until vegetables start to brown.
  5. Cook pasta in salted water for 3-4 minutes less than the packet suggests.
  6. Add 2 tbsp of pasta water to the vegetable mix.
  7. Mix the vegetable mix and pasta and then spoon into a large oven-proof dish.
  8. Top with the mozzarella and McLelland® Cheddar, then bake for 10-15 mins until golden and bubbling. Serve with basil leaves.
